The phrase gets used loosely, so here's ours in plain terms. Every month, one of us goes through every transaction in your accounts, categorizes it correctly, reconciles each account against the actual statement, closes the period, and sends you financial statements you can read.
If something doesn't make sense, we ask you rather than guessing. If something looks like a problem, we flag it in writing rather than burying it in a report you won't open.

What it's worth to you
Two things, mostly. The first is time — the evenings and weekends you currently spend on this, or the guilt of not spending them on it.
The second is the ability to make decisions on real numbers. Knowing your actual margin, your actual cash position, and whether last month was genuinely good or just felt busy. Most owners we work with have been running on a rough mental estimate for years, and the estimate is usually wrong in one direction or the other.
